Month 2 is here!
While we only have 2 whiskies for Month 2 they are both absolute crackers.
The story with Springbank is that they situated the distillery on the site of an old, illegal still, thought you have been in operation since the Middle Ages. I like the sound of this already. *Note to self - must add moonshine to the list of whiskies for the club to try one day.*
Springbank 10 Year OId undergoes a unique process known as two-and-a-half times distillation. Suffice it to say that some of the original mix has been distilled three times, while the rest has been distilled twice. It is then aged in ex-bourbon and ex-sherry casks. The story goes that they do not mix the whisky for consistency of taste rather there is a uniqueness to each batch with some having a more bourbon finish while others have a more sherry finish.
I have kept a small sample of each of the six whiskies we've tried so far. This is handy for comparing colour and nose. Sitting next to the other bottles it is the lightest of all so far. It is even lighter than the no-age-statement Laphroaig QA Cask.
You would be forgiven for thinking this is a mild whisky however there are some big flavours here. The nose hits instantly with vanilla, citrus and fruity flavours. There is even a slight hint of peat here which gets me excited.
Big, strong flavours on the palate. Spicy at the start, I'm happy to see there is that bit of smoke there with almost caramel and vanilla tapering off at the end.
